DUNDEE CAKE
INGREDIENTS
Ingredients for 8–10 servings
100 g raisins (golden and/or regular)
4 tablespoons Speyside whisky (not too peaty, rather sweet)
1 untreated orange (zest and juice)
175 g softened butter at room temperature (this is really important for the recipe)
175 g brown sugar
3 beaten eggs
½ teaspoon salt
½ packet baking powder (about 5–6 g)
230 g flour
1 teaspoon mixed spice
50 g ground almonds
50 g glacé cherries, halved
50 g candied orange peel, diced
50 g pecan nuts, roughly chopped
About 50 g blanched whole almonds
INSTRUCTIONS
Preheat the oven to 160°C (320°F).
In a bowl, soak the raisins in the whisky along with the orange juice and zest.
In a mixing bowl, beat the butter and sugar with an electric mixer until light and creamy.
Add the beaten eggs one at a time while continuing to mix. Stir in the salt, baking powder, flour, mixed spice, and ground almonds. Mix well.
Fold in the raisins, orange juice, whisky, glacé cherries, candied orange peel, and pecans.
Line a 16 cm round cake tin with baking parchment. Pour the batter into the tin and decorate the top with the blanched almonds.
Bake for 2 hours. If the almonds begin to brown too much, cover the cake with aluminum foil after one hour of baking.
